I just made some non alcoholic ginger ale, and now have a huge strainer full of chopped and grated raw ginger root that I boiled and soaked to get ginger juice from. They soaked in water with yeast in it, bakers yeast. can I use them to make a yeast
You could conceivably get something vaguely alcoholic from that, but it's doubtful you'd get what you want.
